Stir Fried Mushrooms With Spicy Masala

Cool December morning. Sitting on the trunk of a fallen tree, with legs on either side, I spotted the mushrooms. Hundreds of them; hiding behind the trunk of the tree. sparkling like stars in the soft black soil.

So today evening we are going to have mushrooms stir fried with spicy masala, with a little help from my mother.

The ingredients
Garllic: 4 pieces.
Green chilly: 4
Onion: 1 finely chopped
Back pepper powder 1 teaspoon
Coriander powder 2 teaspoons
Turmeric powder 1/4 teaspoon
Salt 1/2 teaspoon
Curry leaves 1 bunch
Coriander leaves 1 bunch
Chopped tomato 1 tomato
Mushrooms 300 gms

Wash mushrooms in water laced with turmeric powder and salt , to ensure that it is good and fresh [ do you know that bad ones will turn the water bluish black?] .

Heat a pan add 2 tablespoons of cooking oil. Wait till it gets hot. Add coarsely crushed garlic, green chillies and chopped onion. Fry till you smell the aroma of the browned spices. Then add turmeric powder, coriander powder and pepper powder. toss in the chopped tomato and fry till it turns to a fine paste. then add mushrooms , salt, curry leaves and coriander leaves.

Mix well so that the mushrooms are nicely covered in the Masala paste. Cover the pan and cook for 10 minutes.

This Mushroom curry goes well with rice, bread, chapattis and more. Try this and let's talk about it.
